While there are many versions of fish with almonds, this one has a little something special. The addition of the cornstarch adds a light extra crispiness. We think you'll agree this meal is simple and simply delicious when served with boiled potatoes and a crisp salad. Wine optional!
1/3 C chopped almonds
6 white fleshed fish fillets, about 2 lbs
2 T olive oil
½ C white flour
2 t cornstarch
2 T minced shallots
2 T fresh lemon juice
3 T butter
Salt and pepper to taste
Toast almonds on low heat in small frying pan until golden. Be careful as they can go from golden to black VERY quickly. Set aside.
Thoroughly mix flour, cornstarch and seasonings in 1 gallon plastic bag.
Place fillets two by to into bag and shake to get evenly coated with mixture.
Heat half of the oil on medium heat in a large frying pan. Place three of the fillets in the pan and sauté on both sides until golden brown (about two minutes a side depending on thickness of the fillets.) Remove and repeat with last three fillets.
Place fillets on platter and cover.
Melt butter in pan, sauté shallots until fragrant. Add the lemon juice and toasted almonds. Spoon over fish fillets and serve immediately.
